Easy White Chicken Chili
So winter is almost over and spring is hopefully…… around the corner! As the warm weather comes, we tend to cook most of our meals on the grill. You can be looking for some of those recipes in the future. However on this rainy, cool day in March, I am posting one of my simple and easy crock pot recipes. You can’t go wrong with this and with the color tortilla strips and cilantro, the beauty of the presentation is tempting enough.
Also, I changed a few steps in this recipe, as I find that whenever I can, using rotisserie chicken is economical, quick, and depending on the flavor of the chicken, it add a different dimension to dishes. For this chili I used an herb roasted chicken, but any kind can be substituted. Enjoy and hopefully some grilling recipes will be coming in the near future!
EASY WHITE CHICKEN CHILI
Serves 4
1 Tbs butter
1 jalapeno seeded and minced
2 cloves garlic minced
½ tsp oregano
½ tsp cumin (can add more if want)
½ tsp onion powder
2 cans sliced green chilies
Rotisserie chicken deboned and shredded
2 cans white beans drained and rinsed
1 ½ cups frozen corn
32 oz chicken stock
Salt and pepper to taste
Toppings: Sour cream, cilantro, avocado, tortilla strips, shredded cheese
Put all ingredients in crock pot and cook on low 5-6 hours
Take masher and mash beans to thicken if you prefer
Top with toppings and enjoy!
