Pesto and Fruit Pasta Salad
This is an easy, colorful pasta salad that comes together in no time at all. It also serves a large crowd. Enjoy!
PESTO AND FRUIT PASTA SALAD
Serves 8-10
16 oz tri color orecchiette or shell pasta
1 cup cubed strawberries
1 cup halved blackberries (can also use blueberries)
1 pkg of pearl fresh mozzarella balls
¼ cup fresh or store bought pesto
3 tbs champagne vinegar (you can use any kind but this is a light flavorful one that we enjoy).
2 tsp honey
Salt & Pepper to taste
Fresh basil sliced for garnish
Balsamic glaze
½ cup toasted pine nuts
Cook pasta, drain and cool completely (on cookie sheet preferably).
Whisk together pesto, vinegar and honey and allow to sit for a few minutes to blend.
Whisk again until fully blended and toss ¾ into the pasta. Stir to combine.
Add fruit and mozzarella balls and toss again with the rest of the pasta.
Top with pine nuts, basil and drizzle with balsamic glaze. Serve immediately.
