Grilled Stuffed Chicken Breast/ with Couscous

There always seems to be an extra package of chicken breasts in my freezer as well as some sliced cheese. I tend to love cheese and always have a variety of flavors in my fridge. So feel free to interchange what you have on hand as well. Also, the sweet peppers were a jar of slices I also had on hand. However once the peppers from our garden are ready, we will be using a variety of those that are colorful and fresh. Again, use your imagination and you won’t be disappointed.

You can also tell by now that I love avocados! To me nothing makes a meal zing of freshness than adding a little avocado at the end. And although you can help preserve the avocado by tossing in a little lime juice, once it hits air for too long it seems that they tend to start turning. So we make sure and eat them all from the dish the first day and any leftover meals - well they will have to do without that yummy avocado.

GRILLED STUFFED CHICKEN WITH COUSCOUS 

Serves 4


1 lb chicken breasts

Sweet Pepper Strips (can be found in pickle isle and I had some leftover in my fridge)

Sliced Sharp Cheddar

Sliced Brick Cheese

1 tbs Cajun Seasoning (I use Riley’s Cajun Seasoning)

1 tsp garlic powder

1 tsp onion powder

½  tsp salt - (I used a Smoked Bourbon Salt)

½ tsp pepper

Olive OIl

 Prepared Couscous (I used a small box of olive oil and herb flavored)

Avocado slices

Pound chicken breasts to an even thickness (I do between waxed paper); butterfly keeping end in tact but spreading flat.

Mix dry seasonings together and season both sides of the chicken with the seasonings

Add one slice of cheese on each side of the chicken (if the cheese it too large, use a half of slice on each side); top one side with some of the pepper strips

Fold chicken over and lightly season with olive oil.   Secure chicken with toothpicks

Heat grill to medium heat and grill chicken about 8 minutes per side.  (For ease you can cook on a skillet on the grill).   Allow to rest and remove toothpicks before serving)

Prepare couscous per package directions. Serve chicken over couscous and top with avocado slices.   Enjoy!
