TOASTED GNOCCHI SKILLET
I always love gnocchi! I haven’t made it from scratch yet (although I plan to in the future), it is something I almost always order when its on a menu. This recipe is very easy and also used some of our tomatoes, basil and spinach from the garden. I hope you like it and if you do, let me know how it turned out!
TOASTED GNOCCHI SKILLET
Serves 3-4
1 package Gnocchi
2 cups grape tomatoes halved
2 tbs butter - divided
1 tbs olive oil
1 cup grilled corn from cob
2 slices cooked bacon diced
1-2 cups arugula and/or spinach
2 tbs sliced fresh basil
¼ cup crumbled feta
¼ cup shaved parm/romano or combination
Bring water to boil in a saucepan, add gnocchi and cook till almost done, drain.
In a large skillet melt 1 tbs butter and olive oil on medium high heat. Add tomatoes and sprinkle with salt and pepper. Cook cut side down till almost tender. Turn and continue to cook; add corn to heat. When tomatoes are soft, remove all to a plate or bowl.
Heat 1 tbs butter in the skillet and add the cooked gnocchi on medium/high heat. Turn gnocchi when slightly brown. Continue to cook for a couple minutes and then add the tomatoes, corn, bacon, arugula (and/or spinach) stirring until heated. Add cheeses and top with basil.
